Abstract

The effect of temperature on the antibacterial activity of five multifloral honeys of the State of Hidalgo. The honeys were collected from Acaxochitlan (AC), Arenal (AR), Huehuetla (HU), Orizatlan (OR) and Tasquillo (TA). Determinations were performed by means of bioassays which had an initial concentration 106 - 107 UFC/mL of pathogenic bacteria (Salmonella sp., B. subtilis, P. aeruginosa, L. monocytogenes) determining the removal by the method a pour plate. All honeys were subjected to different temperatures (40, 50, 60, 70 and 80 °C). Significant differences (P <0.05) in the behavior of the different honeys with respect to temperature. In Salmonella sp linear effect was found in all honeys, increasing the temperature goes down its antibacterial activity. For B. subtilis and P. areroginosa honeys behavior AR, AT and HU was linearly. In OR and AC was quadratic behavior where at 60 °C has the highest antibacterial activity. Regarding L. monocytogenes in the honeys AC, AR, HU, OR quadratic, but TA honey linear effect was obtained. The results showed that the sweetness behave differently (linear or quadratic) when subjected to different temperatures and depending on the pathogenic bacteria are eliminated.
