Determination of the physicochemical quality of the bee honey Apis mellifera mellifera produced in the Municipality of Tepatlaxco, Ver., Bottled in glass and PET supported by an ethnobiological study

Beekeeping in the tropical regions of Mexico has a history of hundreds of years. Social and honey-producing bees are an essential part of the religious, food and commercial customs of many indigenous peoples. Honey for human consumption must have good hygienic conditions, characteristic microbiological behavior as a consequence of the composition of the base product made by bees. Ancestral knowledge is not lost, however the process of preparation and packaging has been changing according to the needs of producers and consumers. However, there is no record of the way it was made, it is unknown if the packaging process is correct and if the characteristics that said packaging provides the honey with different physicochemical characteristics. Therefore, in this research, surveys were carried out to beekeepers of the Municipality of Tepatlaxco, to register the knowledge they have regarding the production of honey. Physicochemical variables (pH, Brix degrees and acidity) of honey packed in plastic, new glass and reused glass were determined at different shelf times. Some of the results found were that new and recycled glass containers are viable options for beekeepers in the municipality of Tepatlaxco, Veracruz since they preserve the particular characteristics of honey.
